Do you require a copyright to remain on there even tho it is purchased? If so do you offer a copyright removal option?

You are free the remove the copyright, and edit the theme however you like. The only real rule is that you do not resell or redistribute the theme. It is for use on your websites only.

is there a readme file that says what plugins you already have in place on this? i am pretty sure you need plugins to do the icons etc..
